Butterscotch Pudding, Aarrgh!

Because it is the weekend 
I'm going to keep this post short and sweet! 

Today was 
(Inter)National Talk Like a Pirate day 
and 
the kids and I had a blast with it. 

We talked like pirates before school, 
we talked like pirates after, 
and we even 
made a video 
that won't upload for some strange reason. :-(
 It's pretty funny
and I promise to keep trying to
get it on here! 

Okay, so, 
National Butterscotch Day... 
I've never had butterscotch pudding
and to be completely honest, 
I wasn't looking forward to making it. 
 I thought it was going to be this 
tedious ordeal 
for some mediocre dessert.

Would you believe it if I told you I was
completely mistaken? 

Seriously, I was. 
  I found an awesome recipe here and
the whole thing took about 10 minutes
 to make from start to finish. 
Crazy right? 

It's chilling in the fridge as I write this 
and another kicker? 
It doesn't have to set for 3+ hours or overnight! 
This badboy is ready for you in about an hour,
if that long. 
Even better, 
it's delicious! 
I don't know if you are, but I'm a huge fan of 
salted caramel anything 
and that's kind of what it reminds me of...
It's so good guys, 
creamy good deliciousness. 

Ready for it?

Here are pictures... 

Ingredients: 1/2 cup - Dark Brown Sugar, 2 TBSP + 2 TSP Cornstarch, 1/4 TSP - Salt, 2 TBSP - Unsalted Butter (cut into pieces), 1 TSP - Vanilla, 1 1/2 Cup - Whole Milk, 1/2 Cup - Heavy Cream
And of course I wasn't going to leave you without the recipe! 

Easy Butterscotch Pudding

Directions
Mix together sugar, milk, cream, salt, and cornstarch, 
bring to boil over medium-high heat

Let the mixture boil while whisking for 1 minute exactly!

Take the mixture off of the heat and stir in butter & vanilla

Pour the mix into a glass bowl and cover, 
place in the fridge for as long as you'd like. 
(I did an hour)

Come back, bowl up, and enjoy. 
So light and creamy, of course I had to add vanilla ice cream too (Cool Whip works just as good!). I think it's becoming a signature thing I do. Haha!

  12. Hahaha...I didn't know there was a National talk like a Pirate day. I need to share this with my students on Monday. They'll get a kick out of it.
