Confession...

National Candy Corn Day 
was a major bust... 

Not just because I didn't have any on hand, 
but because I loathe it
and I'm going to be completely honest here...
I refuse to buy it. 

No one should eat it. 
I'm not going to,
Hahaha! 

So, tomorrow is

National Oatmeal Day


Apple Cinnamon Oatmeal... OH YEAH! 

I'm going to share something about me here, 
I'm a habitual breakfast skipper.
I'm too busy.
I'm brushing hair, changing diapers, 
making breakfast for other folks
signing forms, 
refereeing,
feeding babies, 
and making sure the pups are taken care of...
with all that and more 
breakfast for me is the last thing on my mind. 

I know, I know it's terrible to skip breakfast
and I do try to get it in, but alas... Chaos trumps food.

So, imagine how happy I was to actually get to take a few moments 
to enjoy a nice hot, filling, and delicious breakfast! 

What made me happier was my daughter joining in 
the celebration by having a bowl of oatmeal with me, 
It was a sweet moment with my precious daughter 
that while fleeting, very memorable.

I'm looking forward to more of those throughout this 365 day excursion. 
More sweet moments, more simple memories, more quiet and calm, more conversations.
A lot more.

Guess who's back!! National Chocolate Day

Hi friends! It's me! 
Do you remember me?
I hope so. 
I'm back! 
That surgery and life was crazy. 
I'm happy to report that 
The Duke is all well
and 
we are back on track. 

National Days, 
well...
We celebrated a few while 
on hiatus, but I didn't blog about them.
I did post on Instagram
Oh, you're not following me there? 
You can now! Just click on the word Instagram 
and there I'll be. 
I'm also on Pinterest, Facebook, and Twitter, 

We're making this blog official. Ha! 

Now, back to the real stuff.
National Days! 

I told The Duke that I should wait 
and restart on November 1st, but 
he told me I was flaking out...
I'm not a flaker-outer 
(unless it something to do with my family, like surgery),
 so here I am.

Today is 
National Chocolate Day 
and we're celebrating by 
having cups of hot chocolate 
and watching 
Willy Wonka and the Chocolate Factory.

I hoped I've posted early enough for you to celebrate too.

Posts On Hold...

The Duke 
had surgery

I am taking care of my man
until he feels better.

Fluff, Nuts, Pierogi?

Hey y'all! 

I'm beginning to think 
this blog is all about food. 
Every day is a holiday, 
but 
does every holiday have to be about food?

The answer?
Yes, yes it does have to be about food
because this nation loves food. 
Well, at least I know I do...

So today was 
National Fluffernutter Day 
and 
National Pierogi Day
and of course
we had both! 

Funny thing is I've never, ever bought Fluff before... It felt strange. Ha!

Nor have I ever bought Pierogies and after tasting them... I wondered, why... LOL
 So you see friends, 
we celebrated by 
boiling up some pierogies
and 
making some sandwiches
Honey Wheat Bread, White Chocolate Wonderful,
(sounds more like an adult film than peanut butter, but I digress... LOL)
and Fluff... 
Dinner of champions... Le sigh...

The sandwiches were alright, 
the kids enjoyed them, 
and I told them to savor every bite,
because I wasn't buying it again... 
I may or may not be kidding. ;-)

Yep. Fun stuff right there folks.

Frappe... Rappe? No... Notsomuch...

Can't say much about today,
it was 
National Frappe Day
so I got one.
Tall Salted Caramel Frappe.Yum!
It hit the spot 
and I'm glad I got it
because baby girl was up like 
screaming
partying like it was 1999. 
So this mama
needed the caffeine.

Have you tried the Salted Caramel drinks at Starbucks?

Noodles, Noodles, Oodles of well...

Noodles! 
Today is National Noodle Day
and 
in true to me form, 
I waited until the very last second to find 
a recipe to make for dinner. 
Thankfully I had everything I needed on hand, 
(thanks to my newfound love of the kitchen)
and I made an easy, light 
 (can you call noodles light?)
dish with linguine and paired it with some sauteed veggies. 
Dinner done. 

Parmesan Garlic Noodles
Ingredients
1 box of linguine
1/2 stick of butter
2 tablespoons of EVOO
1/3 cup of grated parmesan
1 tablespoon of lemon juice
salt and pepper to taste
parsley finely chopped

1. Cook the noodles like the box says, drain, then set aside
2. In a large skillet melt the butter and add the EVOO
3. Add the garlic to the butter and oil, cook for about 2 minutes
4. Add noodles to butter mixture and toss until evenly coated
5. Remove from heat, add the Parmesan, lemon juice, salt, pepper, and parsley, mix well
Serve hot!

Tacos, Vodka, and Apples Oh MY!

So... 
I totally celebrated yesterday 
and today...
I just forgot to post until around 3 this morning
when I frantically 
awoke from my slumber
and 
accidentally waking my 2 month old in the process
talking about blogging. 
Dedicated much? 

I was seriously kicking myself over 
that all day. 
The Duke told me not to beat myself up, 
that it's an honest mistake 
and that 
you all would forgive me. 
Right?

Alright. 
Now to the important stuff
National Days! 
Yesterday was 
National Taco Day 
and 
National Vodka Day
 
So, since it was a beautiful fall day out 
we took to the streets to see what our local Fringe Festival
was all about, and while there Vodka was celebrated.  

The Duke's vodka mix poured by a bartender at a fabulous little restaurant in our town.

 At home, tacos were on the menu, and
the whole family pitched in to cook dinner.
It turned out great! 
TACOS!!! Delicioso!
This dinner has made me a big fan 
of tacos and I look forward to implementing 
"Taco Tuesday" once or twice a month!

Okay, let's move on to today!
Today was 
National Apple Betty Day. 
I'm going to be honest. I'd never 
heard of Apple Betty until today,
but I'm really happy that today was that day. 

Where we live it was super cold today, 
so I just wanted to do nothing but 
hang out at home and snuggle, 
but since we have athletes in the house 
I spent the day at their games outside. 
 So let me just say that I was extremely happy to 
bake tonight. 

This went in my oven. Ingredients: 4 apples (peeled and cored), 3/4 cup of flour, 1 cup of sugar, 1 stick of softened butter, 1/4 cups of orange juice, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg

This came out of my oven! Mmmmmm!
 Directions
1. Preheat the oven to 375
2.  Add the peeled and cored apples to a buttered pie dish and pour the OJ on top. Mix well and set aside. 
3. . Combine the rest of the ingredients in a bowl and mix until crumbly. 
4. Sprinkle the mixture on top of the apples and make sure to cover it good (it's not a pie, but that crust is the bomb.com, you'll love it!)
5. Put it in the oven for 45 minutes. 

After you take it out 
bowl it up and serve with a scoop of vanilla ice cream or cool whip! 
Enjoy!

Smiling Techies...

Today was 
National Techies Day
and 
World Smile Day...

To celebrate I didn't put my phone down 
I had my face glued to it, 
and well... I smiled at people... 
I even laughed with strangers. 
I think I made a few new friends. 

Now, because my eyes hurt from looking at my 
screen all day, I'm going to rest them up
and rest myself for tomorrow's festivities
because the following are the National Day's...

National Taco Day
and
National Vodka Day

 Hooray!

Fry All The Scallops

This is what I was saying 
quite loudly at the fish market today
and I'm pretty sure 
they thought I was all kinds of cray cray, 
but I didn't care.

Today is
National Fried Scallops Day
&
I was literally floating on cloud 9 because
one of my after-school mom friends 
informed me that there was 
an amazing little local seafood market 
that not only had scallops (fresh from the area),
but also FRIED THEM FOR YOU!!!!! 

(cue sound of music type spinning)

She gave me life with that statement. 
That meant I didn't have to turn my stove on 
AT ALL today! 
Can I get a halleluiah?

I mean, don't get me wrong,
I love cooking, but
this mama is tired today y'all!
Tired with a capital T!

Besides, this seafood market made the
prettiest fried scallops that I have ever seen
Pretty, pretty scallops

We paired them with sweet potato fries
and called it a day.
Now... at 11:30 PM
I'm calling it a night.

Oh... Okay... so here's the deal with the recipe.
My friend read the blog
and
she made me promise not to post the recipe until
I make it, with pictures
because she wants me to be sure that it's as amazing as I said,
and I'm quoting her...
"I want the world to like it. I don't want to be an EH recipe"
So, I gave her my word that I will make the cookies
and post the recipe with pictures... Stay tuned.

Chocolate Chips... Chocolate Chip Cookies

Today was 
National Homemade Cookie Day
and I chose 
what seemed like at the time 
a fairly easy cookie to make...
and it was... 
However. 

Somewhere 
between this morning 
and 
OH CRAP 
I have to go to the grocer, 
life happened. 

We got busy
and 
time went by...
before I knew it, 
it was time to pick up the kids from the school, 
and high tail it to the nearest store 
for some essentials in cookie making
and I still forgot some things. 

Did I mention, 
I planned on making 
80 Apple Dumplings 
for Bible study tomorrow?
No.. Didn't mention it? 

Well I did
and in between taking out the 
the dumplings 
and putting in cookies
and taking out cookies
putting in more dumplings 
I forgot I had to write this post! 

LOL... So here it is. 
11:52 PM 
and I'm doing it. 
I'm not missing a day 
because I lost track of time yet again 
or because I over-extended myself... yet again. 
I'm dedicated to this y'all. 
DEDICATED!

Alright, 
the real reason you showed up... 

Cookies! 

I tried a new recipe from a baking blog
 I found
and they turned out just okay... 
Not going to post the recipe because they were just eh... 

But... 

I will post the recipe that I would have used
from a family friend tomorrow... 
because those would have turned out 
amazefest USA. 
Yeah... 
I totally just wrote that. 
It's 11:57 PM and I'm exhausted. 
LOL, cut me some slack.
